Pumpkin Spanish Omelette
Ingredients
- 1 Cup Sliced Pumpkin
- 1/2 Cup Sliced Onion
- 2 Sliced Garlic Pod
- 3 Egg
- 1 Teaspoon Paprika
- 1 Teaspoon Dry Parsley
- Salt and Pepper
Instructions
- First, grab your pumpkin and cut it open. Make sure to remove the seeds and skin carefully.
- Once that’s done, slice the pumpkin into thin, even slices, about 1/8 of an inch thick. This will help them cook quickly and evenly.
- In a separate bowl, crack in 3 eggs.
- Add a pinch of salt and pepper to taste, along with some dry parsley and paprika for extra flavor. Whisk everything together until it’s smooth and well combined.
- Next, heat up a pan with olive oil over medium heat. Add the pumpkin slices in a single layer and cook for about 2-3 minutes. Then, add chopped onions and minced garlic to the pan. Continue cooking, stirring occasionally, until everything is soft and golden.
- Once done, remove any excess oil from the pan and pour the cooked pumpkin, onion, and garlic mixture directly into the whisked eggs. Stir until everything is well-coated with the eggs.
- In another smaller pan, use the same extra oil from earlier. Pour in the egg and pumpkin mixture, spreading it evenly in the pan. Cover the pan and cook on low heat for about 2-3 minutes, until the bottom is set.
- When the bottom is firm, carefully flip the omelette with the help of a plate. Cook for another 2-3 minutes on the other side until fully cooked.
