You Will Love This Golden Soup

This cozy butternut squash soup is perfect for both lunch and dinner. I used potato, onion, celery, garlic and a few spices that give a perfectly balanced flavour you can taste in every spoonful but feel free to skip or add any ingredients of your choice because squash has its own natural sweetness that keeps the flavour balanced no matter what you mix in.

After making this soup and tasting the first bite, we couldn’t stop eating! The rich, comforting taste just makes you want to finish the whole bowl. I usually make this soup every year or whenever fresh squash is available. It’s one of my favourite dinner options because it feels light yet keeps you full for a long time.

This soup is also very nutritious , it’s rich in vitamins A and C packed with fibre and full of antioxidants that support immunity and overall wellness. The added vegetables make it a wholesome meal while the healthy fats from olive oil or butter (if used) help your body absorb all those nutrients better.

Ingredients

  • 1 Cup Squash
  • 1 Small Potato
  • 1 Small Onion
  • 1 Small Carrot
  • 1 Celery rib
  • Coriander Stem
  • 1 Garlic Pod
  • 1/2 tspn Coriander Seeds
  • 1/2 tspn Cumin Seeds
  • 1/2 tspn Chilli Powder
  • 1/2 Cup Vegetable Stalk
  • Olive Oil
  • Salt & Pepper

Instructions
 

  • Start by cutting the vegetables and keep them aside.
  • Now in a pot, once the oil is hot add coriander seeds, cumin seeds, garlic and coriander stems, Let them sizzle for a few seconds.
  • Now add celery, onion, potato and squash and let them cook for 1–2 minutes.
  • Add chilli powder, salt, and pepper and cook for another minute.
  • Now add vegetable stock, cover and cook on low heat until the vegetables are soft and fully cooked.
  • Once the vegetables are cooked, blend them with a hand blender until smooth and creamy.
  • Serve this cozy hot soup with toasted bread or top it with crunchy croutons.
  • Enjoy😋
