Cheesy Fall Recipe
This pumpkin lasagna is very delicious and an easy way to prepare lasagna. It doesn’t even take much time within 30 minutes it’s ready to eat. The ingredients are minimal like pumpkin, a few spices, cheese and minced chicken but you can also use turkey, pork, beef, sweet potato, potato or whatever makes you happy in this recipe and of course cheese too.
With Vegan Cheese
I don’t eat cheese so at first I tried a vegan version thinking I could eat that but a big no for me because cheese makes me sick but my husband and my daughter both became so happy to see cheese in the recipe. I’ll tell you honestly I don’t often use cheese in my recipes.
So after making the vegan version with potato I thought I should try the normal version with cheese and both really came out well with an amazing texture! At first I thought it looked a bit dry but Zoe said, “No it’s good “Mumma” which means it’s a big thumbs up for the recipe.

Best Pumpkin Lasagna with Chicken and Cheese

Ingredients
- 1/2 Pumpkin
- 200 gm Minced Chicken
- 1 tbsp Ginger Garlic paste
- 1 tbsp Soy Sauce
- 1 1/2 tspn Curry Powder
- 1 tspn Paprika
- Salt & Pepper
- 1 Chopped Shallot
- 3 tbsp Tomato Paste
- 1 tspn All Purpose Flour
- 1 Cup Mozzarella Cheese
For Vegan Cheese Version
- 1 Cup Vegan Cheese
- 1 tbsp Nutritional yeast/Bread Crumbs
Instructions
- Cut, peel and slice the pumpkin not too thin and not too thick.
- Wash it with normal water, pat it completely dry with a kitchen towel then marinate it with salt, paprika and olive oil, Set it aside.
- In a microwave-safe bowl add minced chicken, tomato paste, chopped onion, ginger-garlic, curry powder, soy sauce, corn starch and pepper powder. Mix everything well.
- Cover it with food wrap and microwave for 5–6 minutes. You can also cook it in a frying pan but I made this version in the microwave and it came out really well.
- Now in a pan roast the pumpkin slices on both sides until they turn golden brown but don’t use any oil.
- Now in a baking dish start layering first add a layer of chicken mixture then cover it with the roasted pumpkin slices.
- Then on top of the pumpkin slices add a layer of cheese followed by another layer of chicken and then more cheese,Drizzle a little olive oil on top and cover it.
- Bake in a preheated oven at 350°F for 10 minutes covered then remove the cover and continue baking for another 5–7 minutes or until it looks fully cooked and slightly golden on top.
