The Magic of a Simple Pumpkin Pie Cookies

Three years ago, I met one of my neighbours a beautiful soul in her 70s who has truly inspired me in so many ways. One day she offered me a cookie she had baked and the moment I tasted it I was completely blown away. I had eaten cookies before but there was something magical about hers maybe it was the experience of all her years or just the love in her hands. The cookie melted in my mouth like butter and from that day I couldn’t stop thinking about it.

That simple cookie pushed me to try baking myself. I used her recipe the first time and when I showed her my batch, she smiled and said “Oh, I think I’ve proudly passed on my recipe now.” That moment meant so much to me and it gave me the confidence to keep baking and I haven’t stopped since.

Just recently after finishing the shoot for my pumpkin pie cookie recipe, I called her to see if she was free to try it. She said yes and when she took her first bite that same warm smile appeared, the one that says more than words ever could. I asked “So is it good?” and she replied, “You know I can feel each spice one by one… it’s delicious.” That one line made my day.

Ingredients

Pumpkin Pie Filling

  • 1/2 Cup Diced Pumpkin
  • 1 tbsp Butter
  • 1/4 Cup Brown Sugar
  • 1 tbsp Lemon Juice
  • 1 tspn Cinnamon Powder
  • 1/2 tspn Cornstarch
  • 2-3 tbsp Water

Cinnamon Cookie

  • 1 1/2 Cup All Purpose Flour
  • 100 gm Unsalted Butter
  • 2 Egg Yolk
  • 1/2 tspn Vanilla Essence
  • 1/2 Cup Brown Sugar
  • 2 tspn pumpkin spice
  • 1/2 tspn Baking Powder
  • 1-2 tspn Cornstarch
  • 1/2 tspn Salt

Cinnamon Sugar

  • 1/2 Cup Sugar
  • 2 tspn Cinnamon Powder

Instructions
 

  • Peel, cut and dice the pumpkin into small pieces then set them aside.
  • Melt the butter in a pan over medium low heat. Add the diced pumpkin, sugar and cinnamon powder.
  • Add the lemon juice, cover the pan and let it cook for 3-4 minutes or until the pumpkin is soft.
  • Check if the pumpkin is soft then add the cornstarch slurry and mix until it reaches your desired consistency then set it aside.
  • In a separate bowl add the butter and sugar, mix them together until the mixture is smooth and creamy.
  • Next add the egg yolk and vanilla extract and mix well then add the flour along with all the other dry ingredients and make dough.
  • (Optional) To make sure the cookies are all the same size, I measured the portions.
  • In a small bowl mix the brown sugar with the cinnamon powder. Roll each portion of cookie dough in this mixture and place them on a baking tray lined with parchment paper.
  • Using a spoon or a measuring spoon press a space into the centre of each cookie ball and place a good amount of the pumpkin mixture into this space.
  • Bake the cookies in a preheated oven at 350F FOR 20-25 minutes or until they are fully cooked.
  • The Cookies will be vert soft so immediately out of the oven and allow them completely cool down on room temperature.

Notes

  1. While making space in the centre of the cookie dough, it can be a bit tricky. The dough tends to crack easily. I found a simple trick, apply a little oil to the back of a spoon before pressing as It helps prevent cracks and makes shaping much easier.
  2. After baking the first batch, I realized it wasn’t easy to make the center space in the cookie dough, so I added a little more milk to soften it. Then I portioned the dough again, shaped it and rolled each piece in the cinnamon sugar mixture, this time it turned out much better.
  3. If your cookie dough is too hard, it will be difficult to make space in the centre and may crack so make sure the dough is soft and easy to shape.
