This recipe uses simple ingredients like lentils, cocoa powder, dark chocolate (70%) and a few more basics that are easily available in every baking friendly household. And honestly lentils are almost always there in every kitchen.

Why Lentils? (Hear Me Out.)

I used yellow lentils but this recipe works well with any type of lentil. If you want to add more nutrients you can also mix in some almond flour. I enjoy this muffin as a breakfast treat but you can have it anytime your sweet cravings hit. Even my 6 year old daughter loves it and she shared it with her friends and they all loved it too. Actually Lentils are the hidden hero here. They quietly add moisture, protein, and fiber without changing the delicious chocolate flavor.

I used red lentils, but this recipe will work with any lentils.

70% or higher makes these taste sophisticated and rich. Also you have less sugar.

Anytime Muffin

I eat these at breakfast with coffee. My daughter grabs them as an after-school snack. There’s genuinely no wrong time.

Ingredients

  • 1 1/2 Cup Cooked Yellow Lentil
  • 3 Eggs
  • 1 Banana
  • 3 tbsp Olive Oil
  • 1/4 Cup Maple Syrup
  • 1 tspn Vanilla Extract
  • 1/2 Cup Cocoa Powder
  • 1/4 tspn Baking Soda
  • 1 tspn Baking Powder
  • Dark Chocolate Chip
  • 70% Dark Chocolate

Instructions
 

  • In a bowl mash the banana then add the cooked lentils and mix them well.
  • Now in another bowl beat the eggs until fluffy about 2–3 minutes.
  • Now add oil, maple syrup and vanilla extract to the egg mixture and mix them well.
  • Add the egg mixture to the lentil mixture and blend them well then add all the dry ingredients.
  • Now mix everything well and add the chocolate chips to the mixture and give it a good mix.
  • Pour an equal amount of the mixture into a cupcake pan lined with liners.
  • Insert a big piece of dark chocolate into the centre of the batter and cover it well.
  • In a preheated oven first bake at 425°F for 5 minutes.
  • Then without opening the oven reduce the temperature to 375°F and continue baking for 20-25 minutes.
  • To check whether it’s done always insert a toothpick If it comes out clean the muffins are ready.
  • Let it cool bit and yes!! it’s ready to enjoy 😋
