Even a beginner who has never baked before can make it just mix all the ingredients and bake that’s it, No fuss at all.

This Is Not Very Sweet So Manage Sweetness As per Taste

This lentil banana muffin is perfect for anytime cravings but for me it really goes best with a cup of coffee or tea at breakfast. I didn’t add any sugar in it so it’s not that sweet but I like it the way it is. If you want it a little sweeter you can add sugar, honey or maple syrup as per your choice.

Ingredients

  • 1 Cup Cooked Red Lentil
  • 1/2 Cup Yoghurt
  • 3/4 Cup Wheat Flour
  • 1/4 Cup Almond Flour
  • 1/4 Cup Olive Oil
  • 1/4 Cup Peanut Butter
  • 1 Egg
  • 2 Banana
  • 2 tspn Vanilla Extract
  • 1 1/2 tspn Baking Powder
  • 3/4 tspn Baking Soda
  • 1/2 tspn Cinnamon Powder

Instructions
 

  • In a bowl mash the banana well.
  • Now add cooked lentils and blend everything until well combined.
  • Now in another bowl beat the egg until frothy then add oil, yoghurt, vanilla extract and peanut butter and mix them well.
  • Now mix the banana mixture into the egg mixture and combine well.
  • Add all the dry ingredients, wheat flour, almond flour, baking soda, baking powder and cinnamon powder.
  • Mix everything well with a light hand. At the end add the sliced almonds and mix into the batter.
  • Now pour the cupcake mixture into the cupcake liners and sprinkle a few sliced almonds on top.
  • In a preheated oven first bake at 425°F for 5 minutes.
  • Then, without opening the oven reduce the temperature to 375°F and continue baking for 15–18 minutes.
  • To check whether it’s done always insert a toothpick into the centre. If it comes out clean the cupcakes are ready.
  • Let it cool completely and yes!! it’s ready to enjoy. 😊
