High-Energy Beaten Rice Omelette – Keeps You Full for Hours

Ingredients
- 1 Cup Beaten Rice
- 2 Egg
- 1 tbsp Grated Carrot
- 1/2 Cup Chopped Green Onion
- 1 tbsp Chopped Onion
- 1 Chopped Green Chili
- 1 tbsp Chopped Coriander Leaves
- Salt & Pepper
- Olive Oil
- 1/4 Cup Fried Pigeon Pea with Onion
- 1/4 tspn Plant based parmesan Cheese
Instructions
- Start by washing the beaten rice 2–3 times then drain all the water and set it aside.
- In a bowl beat the eggs with salt and pepper and whisk until frothy.
- Add chopped onion, green onion, grated carrot, beaten rice, chopped chilli and coriander leaves to the egg mixture and combine well.
- Heat a pan on low heat add oil and pour in the egg mixture, Cover and cook.
- Once the bottom is set use a plate to flip the omelette and cook the other side.
- Once both sides are cooked well, the omelette is ready to eat.
