Ingredients

  • 1 Cup Beaten Rice
  • 2 Egg
  • 1 tbsp Grated Carrot
  • 1/2 Cup Chopped Green Onion
  • 1 tbsp Chopped Onion
  • 1 Chopped Green Chili
  • 1 tbsp Chopped Coriander Leaves
  • Salt & Pepper
  • Olive Oil
  • 1/4 Cup Fried Pigeon Pea with Onion
  • 1/4 tspn Plant based parmesan Cheese

Instructions
 

  • Start by washing the beaten rice 2–3 times then drain all the water and set it aside.
  • In a bowl beat the eggs with salt and pepper and whisk until frothy.
  • Add chopped onion, green onion, grated carrot, beaten rice, chopped chilli and coriander leaves to the egg mixture and combine well.
  • Heat a pan on low heat add oil and pour in the egg mixture, Cover and cook.
  • Once the bottom is set use a plate to flip the omelette and cook the other side.
  • Once both sides are cooked well, the omelette is ready to eat.

  • For the topping I added caramelized onion with fried pigeon peas and sprinkle plant based Parmesan cheese.
