The Warm Comfort Food For Winter

This Norwegian rice pudding is very simple to make with just a few ingredients like rice, water, milk, sugar and vanilla essence. For the toppings it is completely up to you and what you love. This rice pudding is very similar to my favourite Indian pudding called kheer. In India people make kheer for almost every festive occasion and special moments like birthdays, anniversaries and especially during prayers when this dessert is offered to God.

Similarities With Indian Kheer

In India kheer is very special yet very simple to make and it is extremely delicious too. You will find thousands of kheer recipes but the base is always the same rice, milk and cardamom. The rest of the ingredients are added as per personal taste.

I remember my mother sometimes used to add poppy seeds and I love adding poppy seeds into kheer along with cashew cream and sliced almonds. Even now when I go to India and my maa makes kheer I always say, “Please save a little for me I’ll eat it the next day.” and you will not believe it after refrigeration kheer tastes even more delicious the next day. It feels like the rice melts on your tongue. I am writing this and my mouth is already full of water, Maybe tomorrow I will make kheer😁.

Ingredients

  • 1/4 Cup Short Grain Rice
  • 3 Cup Milk
  • 1 Cup Water
  • 1/4 Cup Sugar
  • 1/4 tspn Vanilla Essence
  • 1/8 tspn Cardamom Powder
  • Cinnamon Powder
  • Crushed Pistachio
  • Dried Cranberries
  • Unsalted Butter

Instructions
 

  • In a pot add water along with rice and let it cook for 2–3 minutes.
  • Now add milk along with cardamom powder then cook for 10–12 minutes.
  • Add sugar and vanilla essence, let them simmer until it thickens.
  • When it looks thick and mushy, switch off the flame and yes!! It’s ready.
  • Garnish with cinnamon powder, chopped pistachios, dried cranberries and butter.
  • Enjoy😋
