I actually learned a version of this recipe from an amazing Chinese chef I worked with. He shared so many tips and tricks about Indian-Chinese cooking, one of the most popular fusion styles in India. What I love about it is the extra sauce and bold spices that make every bite so flavorful. You’ll find so many street foods in India inspired by this style and they’re all super tasty!

Why I like this

This crispy okra recipe is one of my favourite things to make when I want something fast, bold and full of flavour. Trust me it’s a foolproof crowd pleaser unless someone just doesn’t like okra! It’s also perfect when you want to chill with your favourite drink and your favourite person. In our house my husband and I always take separate plates when I make this—we both agree there’s no sharing when it comes to this crunchy addictive okra 😄 In short: this recipe is a must try. I can’t describe it enough just make it once and you’ll know why it’s so special.

Ingredients
 
 

  • 10-12 okra
  • 1 tbsn fine chopped ginger
  • 1 tbsn fine chopped garlic
  • 1 tbsn fine chopped celery
  • 1 tspn fine chopped chilli
  • 2 tbsn fine chopped onion
  • 2 tspn veg bouillon powder
  • 1 tbsn all purpose flour
  • 4 tbsn corn starch
  • water
  • salt and pepper
  • 1/4 cup chopped green onion
  • oil

Instructions
 

  • First cut the okra in your desired shape but keep the thickness same as shown in the video.

  • In a bowl add okra, all-purpose flour, corn starch, veg bouillon powder and little salt. Add a splash of water and mix everything well to coat evenly.

  • Now add a little more corn starch and coat it well, This will make the okra extra crunchy.

  • In a wok or kadhai add enough oil for frying. Make sure the oil is hot but not smoking medium low heat works best.

  • Add the okra to the wok and fry until it turns golden and you can hear the crispy sound, this means it’s perfectly done.

  • Now strain the fried okra into another bowl and remove the oil from the wok.

  • In the same wok add a little oil (I used the same oil). Add ginger, garlic, celery, onion and chili sauté for a min or until everything turns golden.

  • Now add the fried okra, green onion, vegetable bouillon powder, sugar, salt and pepper. Give everything a nice toss until well combined.

  • If you like it a bit spicy you can add 1 teaspoon of chilli oil at this stage.

Notes

Leftover oil is perfect for reuse! Let the oil cool down — the starch will settle at the bottom. Then strain the oil and it’s ready to use again.
