Ingredients
- 6 Boiled Egg
- 1 Onion
- 1/4 Cup Celery
- 1 Tomato
- 1 tbsp Crushed Ginger Garlic
- 1/2 tspn Turmeric Powder
- 1 tspn Paprika
- 1 tspn Roasted Cumin Powder
- 1 tspn Curry Powder
- 1/4 tspn Sugar
- Salt & Pepper
- Oil
- Bayleaf & Cinnamon stick
- Handful of Chopped Coriander Leaves
Instructions
- Start by chopping and slicing celery, onion and tomato, then keep them aside.
- Make small cuts on the boiled eggs, this prevents from popping or bursting while roasting.
- On medium low heat once the pot is hot add oil along with a pinch of turmeric, paprika and salt.
- Add the eggs and roast them on all sides until they turn golden in colour.
- In the same pot add oil and sliced onion along with a pinch of sugar and fry until caramelized.
- I am using the same pan but you can use another pan if you prefer.
- On low heat add butter once it melted add bay leaf, cinnamon stick and chopped celery.
- Roast them for a minute then add crushed ginger and garlic. Let it cook until it turns golden.
- Once the oil starts separating around the edges, add the caramelized onions and mix them well.
- At this stage add chicken stock and coriander leaves then cover and cook.
- Once it starts boiling add the eggs then cover and cook for 5–10 minutes or until the eggs soak up the curry.
- Before finishing add a little more coriander leaves if you like or skip it if you don’t like too much coriander.
- Yeh!! That’s it it’s ready to serve with steamed rice or flaky paratha.
