Ingredients

  • 6 Boiled Egg
  • 1 Onion
  • 1/4 Cup Celery
  • 1 Tomato
  • 1 tbsp Crushed Ginger Garlic
  • 1/2 tspn Turmeric Powder
  • 1 tspn Paprika
  • 1 tspn Roasted Cumin Powder
  • 1 tspn Curry Powder
  • 1/4 tspn Sugar
  • Salt & Pepper
  • Oil
  • Bayleaf & Cinnamon stick
  • Handful of Chopped Coriander Leaves

Instructions
 

  • Start by chopping and slicing celery, onion and tomato, then keep them aside.
  • Make small cuts on the boiled eggs, this prevents from popping or bursting while roasting.
  • On medium low heat once the pot is hot add oil along with a pinch of turmeric, paprika and salt.
  • Add the eggs and roast them on all sides until they turn golden in colour.
  • In the same pot add oil and sliced onion along with a pinch of sugar and fry until caramelized.
  • I am using the same pan but you can use another pan if you prefer.
  • On low heat add butter once it melted add bay leaf, cinnamon stick and chopped celery.
  • Roast them for a minute then add crushed ginger and garlic. Let it cook until it turns golden.
  • Once the oil starts separating around the edges, add the caramelized onions and mix them well.
  • At this stage add chicken stock and coriander leaves then cover and cook.
  • Once it starts boiling add the eggs then cover and cook for 5–10 minutes or until the eggs soak up the curry.
  • Before finishing add a little more coriander leaves if you like or skip it if you don’t like too much coriander.
  • Yeh!! That’s it it’s ready to serve with steamed rice or flaky paratha.
