Protein Rich One Pot Dinner

This Greek-style one pan spinach & chicken rice is very easy to make. It uses only a few simple ingredients and you can prepare the whole meal in less than an hour without any fuss. Also this Greek-style chicken rice reminds me a little of Indian pulao 😄 which we can also make in both vegetarian and non-vegetarian versions. But one thing I really like here is the use of herbs instead of lots of spices. In Indian cooking, we usually use many different spices but this recipe gets so much flavor from just a few simple herbs. It tastes amazing and is also very easy to make.

When I first started cooking, I mostly knew Indian, Asian, Italian and a few other common cuisines. Simple Ingredients, Great Taste

  • Chicken Thighs : 6 skinless
  • Rice : Soaked basmati rice
  • Spinach : 1 cup
  • Lemon Juice : 2 to 3 tbsp as per taste
  • Crushed farlic : 1 tbsp
  • Spices : 1 tbsp Italian herbs, 1 tspn garlic powder, 1 tspn chili flakes
  • Onion : thin sliced
  • Chicken Stock : 2 cup
  • Olive oil : use enough for saute
  • Salt & pepper : as per taste

Tips

How to make this recipe Vegetarian

If you are vegan or vegetarian, You can replace the chicken with tofu, chickpeas, red kidney beans, paneer or your favourite vegetables. The rest of the recipe will be same just replace the chicken.

How to Adjust tangyness

I used half of the lemon juice for the chicken marinade and the other half while cooking. If you prefer a more tangy flavour you can add a little extra lemon juice.

Ingredients

  • 6 Skinless Chicken Thigh
  • 1 Cup Soaked Basmati Rice
  • 1 Cup Spinach
  • 1 tspn Garlic Powder
  • 1 tspn Chilli Flakes
  • 2-3 tbsp Lemon Juice
  • 1 tbsp Italian Herbs
  • 1 tbsp Crushed Garlic
  • 1 Sliced Onion
  • 2 Cup Chicken Stock
  • Olive Oil
  • Salt & Pepper

Instructions
 

  • In a bowl add the chicken thighs along with garlic powder, chilli flakes, lemon juice, salt and pepper, Mix well until the chicken is evenly coated.
  • Now heat a pan add oil and the chicken thighs then roast until lightly browned on both sides.
  • Now in the same pan add a little more oil along with the garlic and cook until the garlic is lightly browned.
  • Add the sliced onion and cook until soft then add the herbs, lemon juice and soaked rice and mix well.
  • Now add the chicken stock and spinach. Let the rice absorb about 90% of the stock then add the chicken thighs.
  • Add lemon slices on top of the chicken thighs, cover the pan and cook on low heat until the chicken and rice both are fully cooked.
  • Once ready serve hot with a fresh salad, spiced yogurt or any of your favourite sides.
