Ingredients
- 16-17 Baby Potatoes
- 1 1/2 Cup Yoghurt
- 2 tspn Kashmiri Red Chili Powder
- 2 tspn Fennel Powder
- 1/2 tspn Dry Ginger Powder
- 1/2 tspn Black Pepper Powder
- 1/2 tspn Turmeric Powder
- 1 tbsp Dry Fenugreek Leaves
- 1/2 Cup Warm Water if Needed
- Oil for Frying
- Salt as per Taste
Whole Spices:
- 1 Black Cardamom
- 2 Green Cardamom
- 3-4 Cloves
- 1 Bayleaf
- 1/2 Cinnamon Stick
Instructions
- Start by boiling the baby potatoes, Once they are cooked peel off the skin and set them aside.
- Now in a bowl add yogurt along with all the dry spices and salt. Mix everything well and set it aside.
- Heat oil in a kadai or pan add pinch of turmeric powder as it helps prevent oil from splattering and also gives the potatoes a beautiful golden colour.
- Gently press each potato with your palm then carefully place it in the hot oil. Fry until golden brown.
- Set the fried potatoes aside, Remove excess oil then add whole spices followed by the yogurt mixture.
- Cook for 5-6 minutes or until the gravy thickens and the oil starts to separate then add potatoes and water if needed.
- Cover and cook for 5 more minutes, add dried fenugreek leaves, mix well and switch off the flame.
- Cover for a few more minutes then it's ready! Serve with roti, naan, paratha or plain rice along with salad and pickle. Just Delicious!
