Spinach roti is not just healthy, it’s a vibrant and flavourful twist to your regular roti. The beautiful green colour and soft texture make it perfect to serve with any curry, chutney or even plain yogurt. To make it even healthier and tastier I added cottage cheese in it. It’s a perfect way to boost the protein and add extra nutrition to your meal without much effort.

You need The Perfect Dough To Make The Perfect Roti

Perfect roti starts with a good dough. I use whole wheat flour with Spinach puree. Use water if needed add water gradually little by little. Knead dough for 7-8 minutes. In the end add little oil and knead again. After few minutes dough will be soft and non sticky. Now you have a perfectly soft dough for making Spinach roti.

Find Right Balance of Heat and Time

Spinach Roti cam be cooked on any pan. But preferred pan is Tawa. It is made of thick iron. Due to thickness of pan heat distribute evenly.

I place the roti on the pan and wait about 20 seconds until small bubbles appear, then flip it. Once the other side develops light brown spots, I use tongs to place the roti directly on the flame. This is where the magic happens—it puffs up like a balloon! If you don’t have a gas stove, gently press the roti with a cloth while it’s still on the pan to help it puff up.

Ingredients

  • 1 cup 30 g spinach

  • 1/4 cup 52.5 g crumble dry cottage cheese

  • 2 pods 2 pods garlic

  • inch inch ginger

  • 1 cup 120 g whole wheat flour

  • 1/4 tspn 1/4 tspn salt

  • 1/2 tspn 1/2 tspn olive oil

  • 1/2 cup 1/2 water

  • coriander leaves

Directions

  • In a blender add spinach, cottage cheese, ginger-garlic, coriander leaves and a little water. Blend it well until it becomes smooth like a smoothie.Mix everything in blender to make pureeSpinach puree for making dough for roti
  • Now pour the spinach mixture into a bowl. Add salt and wheat flour then knead it well to make a smooth and soft dough.add flour to spinach puree to make dough
  • Add a little oil and knead again until smooth.add little oil and finish dough
  • Divide the dough into small, equal-sized balls.divide dough into small equal size of balls
  • On a lightly floured surface roll each ball into a thin, round shape with a rolling pin.roll thin rotis with a rolling pin
  • Heat a flat pan (tawa) and place the rolled roti on it. Cook one side until bubbles form then flip it, Now cook the other side and press gently with a cloth or spatula. Optionally you can puff it directly over a flame for a few seconds.bubbles form on one side, ready to flip side nowpress with cloth to puff up roti
  • Once lightly browned and cooked, remove from heat and serve hot with your favourite curry or just as a wrap.lightly brown and ready to serve
