Ingredients

  • 3 Eggs
  • 1 tbsp Chopped Garlic
  • 1/4 cup Chopped Onion
  • 1/4 cup Feta Cheese
  • 1 cup Baby Spinach
  • Salt and Pepper
  • 2 tspn Olive Oil
  • 1/4 tspn Oregano

Instructions
 

  • In a bowl beat the eggs with salt and pepper until light and frothy.
  • Once the pan is hot add oil then garlic and onion, Sauté for a minute until golden brown.
  • Now add the spinach and cook until it becomes soft and mushy.
  • Add the egg mixture and mix everything well, Sprinkle oregano on top and let it cook until the bottom is set.
  • Flip it to cook the other side then add crumbled feta and fold the omelette.
