This rice and cheesy omelette is like a mix of an omelette and a pie! I made it with just a few simple ingredients but you can always add more vegetables of your choice, It’ll still turn out amazing. I usually make this using leftover rice sometimes adding a bit of lentils and veggies for lunch. It’s super satisfying and keeps you full for a long time and this omelette is full of flavour packed with protein and fiber and perfect for any time of the day.

Ingredients

  • 4 eggs
  • 1 chopped green onion
  • 1/2 cup cooked white rice
  • 1 tbsn butter
  • 1/2 cup cheddar cheese
  • 1 tspn chilli flakes
  • salt and pepper
  • chopped coriander leaves

Instructions
 

  • In a bowl, beat the eggs with salt and pepper.
  • Now heat a pan and add butter. Once the butter melts add chopped green onions and sauté for a few seconds.
  • Add the cooked rice, salt, pepper and chilli flakes, Mix everything well.
  • Now add chopped coriander leaves along with the egg mixture and mix it well.
  • When the egg is set from the bottom, add cheddar cheese on top.
  • Now place the pan in the oven and broil on low for 4–5 minutes.
