This rice and cheesy omelette is like a mix of an omelette and a pie! I made it with just a few simple ingredients but you can always add more vegetables of your choice, It’ll still turn out amazing. I usually make this using leftover rice sometimes adding a bit of lentils and veggies for lunch. It’s super satisfying and keeps you full for a long time and this omelette is full of flavour packed with protein and fiber and perfect for any time of the day.

Cheddar Rice Omelette- Perfect Use Of Leftover Rice

Ingredients
- 4 eggs
- 1 chopped green onion
- 1/2 cup cooked white rice
- 1 tbsn butter
- 1/2 cup cheddar cheese
- 1 tspn chilli flakes
- salt and pepper
- chopped coriander leaves
Instructions
- In a bowl, beat the eggs with salt and pepper.
- Now heat a pan and add butter. Once the butter melts add chopped green onions and sauté for a few seconds.
- Add the cooked rice, salt, pepper and chilli flakes, Mix everything well.
- Now add chopped coriander leaves along with the egg mixture and mix it well.
- When the egg is set from the bottom, add cheddar cheese on top.
- Now place the pan in the oven and broil on low for 4–5 minutes.
