High in proteins and essential deitry fibres

If you prefer a meat-free version simply skip the chicken or replace it with mushrooms, bell peppers or any veggies you love. For a vegan twist use plant-based milk, vegan cheese and egg substitutes like chickpea flour batter or tofu mix. This omelette is not just tasty, It’s packed with protein, vitamins and calcium, giving you the energy to start your day. The mix of greens and cheese makes it both nourishing and comforting, the kind of breakfast that puts a smile on your face before the day even begins.

Fun Fact: A single egg contains almost all essential vitamin and mineral required by the human body, except Vitamin C

There was a famous ad campaign in India in the ’90s with the tagline: ‘Sunday ho ya Monday, roz khao Andey’ (Sunday or Monday, eat eggs daily).

I have so many beautiful stories from those days, and slowly, I’ll share them all here. It’s a lovely way to connect with my little online family. My 5-year-old already says I’m the best storyteller, especially after our bedtime stories every night.

Thinking about that ad always puts a smile on my face because at that time eating eggs every day was not possible for most families. Eggs were expensive and in a middle class home with 6–8 members, It usually meant having eggs only once or twice a week.

But times have changed. Today many people start their day with eggs whether you’re a fitness lover, someone looking for a healthy breakfast or simply because you can now afford it.

That’s why my Omelette Series is so special to me and I hope to all the women (and men) out there who love Omelette and want to try them in different styles and flavours.

Ingredients

  • 2 Egg
  • 1 cup Chopped Spinach
  • 2 Chicken Strips
  • 2 tbsp Milk
  • 1/4 cup Feta cheese
  • Salt and Pepper

Instructions
 

  • In a bowl beat the eggs with milk, salt and pepper until light and frothy.
  • Now in a pan over medium low heat, spray some oil and cook the chicken strips from both sides.
  • Now in the same pan add a little oil and cook the spinach until it becomes soft and mushy.
  • Now add the cooked and chopped chicken strips and mix them with the spinach.
  • Now pour in the egg mixture and mix everything well, Let it cook for about 2 minutes or until it sets at the bottom.
  • Now add feta cheese on top, fold the omelette and flip it to cook well on both sides.
  • If it’s cooked from both sides then yes – It’s ready to eat.

  1. Instead of chicken strips you can also use bacon strips.
  2. Or you can also enjoy this omelette without any meat or cheese – It’s all up to you.
