I love these carrot noodles as much as my daughter does. First of all, they look adorable and second also you can serve them with any sauce you like. Try them with peanut sauce, garlic sauce, chilli sauce or keep them very simple like My daughter loves hers with just butter, salt and pepper nothing else(easy peasy)! 😄

These noodles are very kid-friendly but their bright colour and cute shape can easily attract adults too and the best part? You can prepare them in around 30 minutes!

Ingredients

  • 5 Carrot
  • 110 gm Glutinous Rice Flour
  • 2 Pod Minced Garlic
  • 2 Thinly sliced Green Onion
  • 1 tspn Red Chilli Flakes
  • 2 tbsp Oil
  • 1 tbsp Light Soy Sauce
  • 1 tbsp Vinegar

Instructions
 

  • Start by peeling and cutting the carrot then boil it in salted water until it becomes completely fork-tender.
  • Once done, drain the water and immediately mash the carrot until smooth or blend it into a smooth paste.
  • Add glutinous rice flour in batches and mix until get smooth & firm dough, dough should be soft and easy to handle not too hard or too wet.
  • Start shaping the dough into small button noodles or make any shape you like.
  • Boil them in hot water for 2–3 minutes or until the noodles start floating to the top.
  • Place the cooked noodles in a bowl and add all the remaining ingredients, Pour hot oil over the top, mix everything well and voilà! it’s ready to serve.
